<p>When making homemade chocolates, you are simply melting chocolate and creating your own shapes and designs.  This is where the real fun lies.  Everyone loves to eat chocolate, and making a unique design for your wedding brings the experience to a personal level.  In order to make these unique designs you will need chocolate candy molds.  </p>
<p>There are several different kinds of candy molds in shapes specifically for wedding to choose from, all of which are readily available.  You can choose from molds that are made out of silicone, plastic or metal.  The silicone and plastic molds are the easiest ones to use.  </p>
<p>Typically as the chocolate hardens, it begins to separate from the mold.  While this process helps in popping the chocolate out of the mold, you might still need to assist the chocolate with this.  The silicone and plastic chocolate molds will bend a little, thereby making this process easier.  </p>
<p>The easiest kind of chocolate mold to use is the flat mold.  They are simple to use and they allow you to make many chocolates at one time.  Although chocolates made from a flat chocolate mold are flat on one side, they can often be unique and bite-sized for easier snaking and enjoyment.  </p>
<p>Another kind of chocolate mold is known as a hollow mold.  Hollow molds allow you to be able to fill the chocolates with different kinds of fillers like peanut butter, caramel or even different kinds of fruit.  And the third type of chocolate mold is a 3-D mold.  A 3-D mold allows you to create chocolate that is larger and has details on all sides.  </p>
<p>The care of chocolate molds is very important.  Purchasing chocolate molds is a one-time purchase so you will be able to use these molds for many years to come if they are taken care of properly.  One thing about chocolate molds that a lot of people do not know is that you do not need to wash your chocolate molds every single time you use them.  You only need to wash them when you are completely finished making your chocolates and are ready to put them away.  </p>
<p>You can use a small amount of mild liquid soap to wash them but do not soak them.  Another thing you should never do with your chocolate molds is to pout them in the dishwasher.  They will get ruined.  You also do not need to scrub the chocolate molds.  Simply rinse the molds under lukewarm water and use your fingers to rub the liquid soap into the tiny crevasses.  You can then rinse it off and dry them with a soft cloth or paper towel.  </p>
<p>Be careful not to store chocolate molds in a hot area during the summer.  They should be stored in a cool, dry place.  With the right kind of care, you should be able to use your chocolate molds far into the future.  </p>

Different lollipop molds give your candies a clean appearance.  Additionally, they give you the freedom to shape your lollipops into many different designs allowing you to create unique and specialized candies for parties, holidays or family and friends.  </p>
<p>There are three types of basic candy and lollipop molds.  The one that most people are familiar with and use most often for lollipops is the basic flat candy mold.  These molds allow you to be able to create specific shapes like hearts for Valentine’s Day, pumpkins for Halloween, trees for Christmas, etc.  </p>
<p>If you look hard enough online or in nearby cooking supply stores or in craft stores, you can find almost any shape or design you are looking for.  Flat candy molds are easy to use and store, and cheap to buy.  Most candy molds are typically plastic, resin or rubber and are as their name implies, flat.  The hot candy is poured into the mold and is then allowed to harden.  </p>
<p>One flat candy mold typically comes with the shape of more then one of the specific types of designs pressed into it, allowing you to make several candies at one time.  When the candy has cooled, the mold is flipped over and the candies are “popped” by applying a little pressure to the back.  One side of the candy is left with the design imprinted on it or in the shape of the design, while the other side of the candy is flat.   </p>
<p>Another type of candy mold is called a 3-D mold.  A 3-D candy mold can also be used for lollipops and will give your candies a greater shape then the flat candy molds.  Rather then being flat on one side, a 3-D candy mold creates candies that have greater depth and shape all around.  Like the flat candy molds, they are also simple to use.  A 3-D candy mold is sold as two pieces.  </p>
<p>One piece is the front side of the design and the other piece is the backside of the design.  You pour the candy into one side of the mold almost all the way to the top.  You then allow the candy to harden.  You also pour candy into the backside of the mold about a quarter of an inch from the top and allow the candy to harden almost completely.  When the candy in the backside of the mold is almost completely hard, pop the candy out of the front side of the mold and gently place it on top of the backside.  After you allow the candy to harden completely, the two separate candy sides should stay together.  </p>
<p>Other types of 3-D molds are sold as one piece with one half of the design on one side and the other half of the design on the other side and the entire mold folds together.  With these types of 3-D candy molds you pour the candy into both sides at the same time.  You fold the mold in half bringing each half of the design together before the candy is almost hard.  </p>
<p>The third kind of candy mold is a hollow mold.  This candy mold is not used for lollipops.  Hollow candy molds are used when you would like to fill the middle of your candies with a treat like peanut butter.  Although these molds can be used with hard candies, they are mostly used for chocolates.  After the chocolate is melted, use a small paint brush to brush the chocolate onto the sides of the mold.  </p>
<p>You then place the mold in the refrigerator to give the chocolate a chance to chill.  This process might have to be done several times until there is enough chocolate around the sides of the mold so that the light does not shine through if you were to hold the mold up to it.  You then place your filling inside the mold and cover it with the rest of the chocolate.  When the chocolate is completely hardened, you can carefully pop out the candies from the mold.        </p>

			<content:encoded><![CDATA[<p>When most people hear about candies made at home, they most likely think of chocolate candy.  But, there are many more different kinds of candy that can be made at home such as rock candy, truffles, bonbons, lollipops, and so much more.</p>
<p>There are a variety of candies you can make at home but one of the easiest is rock candy.  You simply tie a thick cotton thread to a pencil and place it across the lip of a jar.  The thread should be hanging about one inch from the bottom of the jar.  Attach a paper clip to the bottom of the thread to weight it down and ensure it hangs straight. This is just to find the height of the thread.  </p>
<p>You need to wet the thread and roll it in granulated sugar.  This base layer will give the sugar crystals something to “grab” when they start to form.  Set the thread aside to dry while you prepare your sugar syrup.  Find a recipe and follow it to make the sugar. When it is ready, you just need to pour it into the jar then lower the sugared string into it until it hangs about one inch from the bottom.  Cover the top of the jar with paper towel. You should start to see sugar crystals forming within 2-4 hours.  </p>
<p>Allow the rock candy to grow until it is a good size but not too large or it might start growing into the sides of your jar.  It is that simple.  Another very simple recipe that you can use to make hard candy such as lollipops requires a combination of granulated sugar, corn syrup and water.  All you need to do is combine the 3 1/2 cups of granulated sugar, 1 1/2 cups of corn syrup and the 1 cup of water into a saucepan.  Heat the combination over medium heat until the sugar dissolves.  You need to stir the mixture as it melts together, and then raise the heat until the mixture comes to a boil.  Boil it without stirring until the candy thermometer reads 300 degrees Fahrenheit.  You can then remove the pan from the heat.  </p>
<p>If you want, you can add additional flavoring or food coloring at this point in the process, and mix it carefully.  Pour the candy mixture into hard candy molds but make sure that you do not touch the candy mixture because it will be very hot and burn you.  You can add the lollipop sticks if you want and let the molds cool on the counter until the candy is completely set and cooled.  When the candy is cool and hardened, turn the mold over and gently pop the candy out of the mold onto wax paper on top of a soft surface such as a towel.  You can then wrap your candies creatively in cellophane.</p>
<p>The secret to making hard candy come out perfectly is to make sure that you boil the sugar solution until the thermometer reads 300 degrees Fahrenheit.  If the sugar solution is not boiled to the right temperature, the candy could possibly not harden all of the way and you might be left with a gooey mess.  Another thing that could contribute to this is if you stir the sugar solution for too long after it has reached the optimal<br />
temperature.  </p>
<p>In order to avoid this risk, have your flavoring and coloring already mixed in a small bowl.  After you remove the sugar solution from the heat, pour the flavor and color mixture into the pot quickly and stir it until all of the color is even.  You should only stir the solution for two to four seconds.    </p>
<p>Although making candy is a really fun experience, if you are a beginner you should start out with one of the more simple candy recipes.  Once you have mastered the art of candy making, you will have the confidence and experience to move on to more challenging recipes. </p>

Making rock candy is truly an easy candy to make and loads of fun to do.  The kids will love to watch the sugar crystals growing to make candy, but they will enjoy eating it more.</p>
<p>Making candy at home has its advantages.  You are able to create unique and interesting creations and really make them personal.  There are many different candies out there, many of which can be made right at home.  If you are not sure what to make, consider your options. </p>
<p>One type of candy you can make at home is hard candy.  Hard candy consists almost entirely of sugars with small amounts of flavoring and color.   Some common hard candies that you can make at home are peppermint sticks or candy canes, fruit drops, lollipops and clear mints.  Another type of candy variety is the soft kind like marshmallows, some jellies, and nougats.  </p>
<p>These types of candies can also be made from home but require a little more skill.  They are made from sugar, but no more than five percent of other ingredients have been added.  Cotton candy is a great example of this kind of candy.  It is almost pure spun sugar that has been melted with only a small amount of coloring added.  Although marshmallows are not thought of as a type of candy, they would fall into this category as well.  </p>
<p>They are made by whipping air into a mixture of sugar, corn syrup, gelatin and egg whites.  The third type of candies contains large proportions of ingredients other than sugars such as fudge, caramels, chocolates, sugar- or chocolate-covered raisins or nuts, and pastes.  Marzipan is probably the best known and is made from crushed almonds, sugar, and egg whites.  But, chocolate fudge is probably the candy that is most easily made at home.  </p>
<p>Chocolate fudge is made from corn syrup, sugar, chocolate, vanilla, milk, and butter cooked together until the desired consistency is reached.  It then needs to be cooled and allowed to harden.<br />
Both beginning and experienced candy makers can easily find a candy to make that will suit their skill level.  Remember not to be too ambitious when you&#8217;re new to this craft.  Try starting with the easiest recipe, like rock candy.  And then when you get used to boiling a sugar solution, measuring its temperature, etc., you can try to tackle the more difficult candies like peanut brittle or fudge.  By doing this, you’ll learn the little secrets it takes to succeed.  For example, you should always make candy on a cool, dry day.  </p>
